Simple Summer Salad

Ingredients

  • 1 cup pasta

  • 1 cup red lead lettuce, chopped

  • 2 cups arugula

  • 1/2 cup chickpeas

  • 1/2 cup red bell pepper, chopped

  • 1/2 cup celery, sliced

  • handful of fresh dill

  • 3 tbsp vegan mayo

  • 1 tbsp water

  • 1/2 tsp sriracha

Instructions

Cook pasta according to package instructions. Set aside and let cool. Make dressing by adding vegan mayo, water and sriracha to a bowl and whisk until smooth. Assemble bowl by adding lettuce and arugula to the bottom of a bowl and continue with the rest of the vegetables and pasta, topping with dressing and fresh dill.
